Buttercream Icing

So lately a lot of my friends were asking me how to make this icing and its the easiest of all. Its nothing but a creamed mix of butter, icing sugar and vanilla essence. This icing is good for cupcakes ad well as icing cakes. Its really creamy and light and as its simple to make, this is the one you will prefer making the most. Ingredients: 200 gms of butter at room temperature 500 gms of icing sugar (A pack of it) 2 tsp vanilla essence Method: Beat or cream equal amounts (200gms each) of butter and sugar till light, fluffy, creamy and smooth.  Add more icing sugar to get the right consistency according to the use.  Finally add the vanilla essence and beat well for a few seconds. Using a pallete knife smear your cake once chilled with it or put into a piping bag and pipe over you cupcakes using various nozzles. Vanilla Cupcakes with Vanilla Buttercream Frosting

For the cupcakes: 175  grams  self-raising flour 175  grams  unsalted butter  or margarine 50  grams  caster sugar 3  medium  eggs 1  teaspoon  vanilla extract F OR THE VANILLA BUTTERCREAM FROSTING: Approx 200-300  grams  icing sugar 100  grams  butter 2 tsp   vanilla extract Method: Preheat oven to 180°C.     Cream the butter and sugar until light and smooth.  In a bowl whisk the eggs until combined then add to the sugar and butter mix together.  Stir in the vanilla extract and then finally sieve the flour and add to the wet mixture to form a smooth batter.    Divide into cupcake cases and put in the oven on the middle shelf until a skewer comes out clean )approx 20 -25 mins depending on appliance). This cake is so moist and soft and is a spectacular desert with the lip smacking cream cheese frosting.
